Ca' di Mat: The essence of the Sierra de Gredos
Ca' di Mat is the result of the passion and winemaking legacy of Victoria Serrano, originally from the Sierra de Gredos, and Paolo Armando, from the Barolo-Langhe region. With generations of winemaking tradition in their families, they have created a winery that captures the elegance and expressiveness of Gredos within the DO Vinos de Madrid.
Their vineyards, a true high-altitude terroir, extend over 20 hectares at 600-850 meters above sea level. In this privileged setting, they produce just 20,000 bottles per year, allowing them to oversee every stage of the process with a meticulous, artisanal approach.
Respectful viticulture and patient winemaking
At Ca' di Mat, vineyard intervention is minimal but precise. They practice light pruning to avoid forcing the vine and allow the fruit to reach its peak without excessive concentration.
In the winery, fermentation takes place with native yeasts in concrete tanks. One of the most fascinating processes is the maceration of the red wines, which can last up to 90 days. Despite this lengthy period, the pressing and winery work are so delicate that the result is fine, elegant, and extremely subtle Garnachas.
Centenary vineyards on granite soils
The Ca' di Mat vines are between 60 and 100 years old, planted in small plots of granitic soils that impart a pronounced minerality to the wines. These vines, accustomed to the harsh climate of the Sierra de Gredos, are cultivated using an organic viticulture approach based on respect for nature, patience, and meticulous work.
Each bottle of Ca' di Mat is a pure expression of this wild and magical landscape, where tradition and innovation come together to create wines of unparalleled elegance.
