La Cometa wine is 100% Tempranillo (Tinto Fino in this area) from vineyards with an average age of 73 years. The Harvest is manual with strict selection of the grapes in each of the plots. Once in the winery, La Cometa is neither destemmed nor crushed and the grapes from some plots are foot trodden in the traditional way. Vinification is done separately and different tanks are used depending on each plot. French barrels, oak foudre and clay amphorae are used. It is then aged for 14 months in foudres and French barrels. It is full of notes of black pepper, plum, cherries and violet.
