100% Listán Blanco (Palomino Fino) from ungrafted vineyards of average 100 years old. Fermentation in stainless steel with indigenous yeasts and aging on fine lees.

Listán Blanco de Canarias was first brought to the Canary Islands in the 18th century by the Andalusian conquistadors, and now thrives there in the volcanic soils. They grow it at higher altitudes to accentuate the natural freshness of the grape, and continue to cultivate the vines using the traditional vine method inherited from Portuguese settlers in the 15th century. The vines are scattered across the northwest of Tenerife, on the slopes and ravines that were created by the last eruptions of the Teide volcano, where the vines are cooled by the sea breeze.

​A delicately fragrant wine, Listán Blanco de Viñátigo has attractive aromas of fennel, dried fruits and fig leaves, with the distinctive smoky minerality that is so typical of wines grown in volcanic soils.

It pairs wonderfully with grilled fish, potatoes and mojo verde - a traditional sauce of the islands based on garlic, cilantro and olive oil.
