SW1004-NV Bermejos Malvasia Naturally Sweet NV
Malvasía Dulce is the historic wine of the Canary Islands. Five centuries ago the explorers left the islands with what they would need for the trip and part of their stay in the new world. The boats had different conditions and it was not easy to keep a wine at the right temperature. En route a wine could be Maderized (like Madera wines - they literally heat and oxidize in transit over the sea). Instead of letting the Canary Island malvasias maderize on the ship, they fortified it in the and blended it - Solera-style as in the style of Sherry. Now, the system is much more modern and some producers continue to do it as a tribute to the past. The sweet Malvasía from Bodegas Los Bermejos is a naturally sweet white wine from a late harvest, without the addition of alcohol (it is not fortified) and with natural sugars from overripe grapes. Aged in French oak, Allier, using a solera system of almost twenty years.

The wine goes very well with pâtés, foies, strong cheeses, nuts, fruit compotes and dark chocolate.
