Al contrario, los viñedos están siempre expuestos a los vientos alisios que llevan vientos frescos del mar y del norte dándoles a los vinos su frescura y su salinidad. Debido a una erupción que duró seis años en el siglo deiciocho, los viñedos de Lanzarote parecen viñedos plantados en otra planeta. \u003c\/span\u003eEn esta escena surrealista con suelos negros y montañas de bermellón (la raíz de la palabra Bermejos), cada viña tiene que buscar el agua unos 5 metros o más debajo de la lava, mientras que combaten a los vientos alisos que soplan en la primavera y verano. Aquí cada viña está plantada en un hoyo de mínimo 4 metros de profundidad para llegar a la materia orgánica en el subsuelo. Todo el trabajo es a mano y los rendimientos son algunos de los más bajos del mundo.
